As we bid adieu to winter and welcome summer, here are some interesting recipes which are not only easy to make at home but are healthy and nutritious as well. The ingredients used are easily available in Doha.

 
Grapefruit
Pomegranate Duet
 
Ingredients
Grapefruit 2
Pomegranate ½
Mint leaves few sprigs
Lime 1
Crushed ice as required
Salt a pinch
Sugar (optional) as required

 Method
1. In a citrus juicer extract grapefruit juice.
2. Add some fresh mint leaves, some ice cubes, a pinch of salt to the juice and blend.
3. Pour the juice in glass and sprinkle some pomegranate seeds on top.
4. Garnish with lime slice and serve chilled.
Note: Sugar is optional and you can avoid it if you don’t want to put extra calories to your drink.
 
Minted Pineapple Shots
 
Ingredients
Pineapple 1
Mint leaves few sprigs
Ginger juice 1 tsp
Coriander leaves
Lemon 1
Salt a pinch
 
Method
1. Wash and dry mint and coriander leaves and rub with hands to make a coarse powder.
2. Peel and core pineapple and take out juice and refrigerate.
3. Rim the shot glasses using lemon juice and salt and dried mint and coriander powder.
4. Add ginger juice to the chilled pineapple juice and pour in shot glasses.
5. Serve cold.
 
Tangri Kebab
 
Ingredients
Chicken legs (drumstick) 4
Yoghurt 6 tbsp
Lemon juice 1½ tbsp
Garlic cloves 4-5
Olive oil 2 tbsp
Vinegar 1 tbsp
White pepper powder 1/3 tsp
Ginger powder 1/3 tsp
Paprika powder 1/3 tsp
Allspice powder 1/3 tsp
Salt to taste
Tomato paste ½ tsp
Dijon mustard 1 tsp
Lemon 1
Romaine lettuce 3-4 leaves
Bell peppers ½
 
Method
1. Combine yoghurt and
all the spices in a bowl and mix
well.
2. Marinate the chicken legs with the marinade and refrigerate for 4 hours.
3. Skewer and cook in tandoor or on charcoal barbecue grill.
4. Turn to ensure even cooking over medium heat.
5. Cut lettuce and bell peppers to make salad base.
6. Serve on top of prepared salad with lemon slice.
 
• This recipe is a great for outdoor barbecues during this season as the weather is pleasant and ideal for family picnics.

Grapefruit
Grapefruit is a lookalike of orange and bears no resemblance to grapes. The reason why it is called grapefruit is that it grows in clusters on the tree, that from a distance, looks like bunches of grapes. When the fruit was found it was also called ‘forbidden fruit’. And also some people called it a cross of pomelo and sweet orange. Grapefruit is usually eaten during breakfast and is a rich source of vitamin C. It is also referred as “fruit of paradise” for its unique health-promoting as well as disease-healing properties, especially among health-conscious fitness enthusiasts.

Pineapple

Ever wondered why pineapple is called pineapple where as there is no pine or apples in it? The Spanish explorers thought pineapple looked like a pine cone, so they called it “Pina.” The English added “apple” to associate it with juicy delectable fruits. Raw pineapple is an excellent source of manganese and vitamin C. Also consuming pineapple will help in digestion of the food and has a refreshing effect during summer. Chunks of pineapple are not only used in desserts such as fruit salad, but also as a main ingredient in savoury dishes, such as hamburgers, and as a pizza topping. Crushed pineapple is used in yoghurt, jam, sweets, and ice cream. The juice of the pineapple is served as a beverage.
